This is not your usual mango cake in Singapore, and the positioning of this cake is interesting.
From Le Gateau Maison site:
"Boy likes girl. Boy do not dare to tell girl...This sort of story is a dime a dozen, but it is beautiful in its own way.
Unrequited love. Named it after a girl that a friend is pinning for. It is beautiful but very fragile"
The use of almond dacquoise in this case is to signify the "fragile" nature of a unrequited love.
There is no sponge for this cake, so for folks used to the mango cake from the many cafes and restaurants, this is vastly different.
It is made of Mango Mousse, Mango Filling, Fresh Mango and Almond dacquoise. It is all mango and not much of a cake.
Look wise, it is very pretty but this is not an easy cake to slice and serve though once served, the guest is bound to be pleasantly surprise by the taste.
